| After the harvest the grapes are only sulphurized when left on the must for a long time and are then pressed with a mechanical horizontal press. The must is not sulphurized, but it is to a large extent racked and fermented in tanks and wooden casks, occasionally (only in the case of fermentation complications) with pure selected yeast added, at around 28 degrees celsius. |
