| After the harvest the grapes intended for the production of white wine are destemmed, sulphurized and left to stand on the must for between 2 and 6 hours before being pressed. The racked must is then fermented with selected yeasts at around 22C, 70% of it in styrol containers and the other 30% in high grade steel tanks. |
