| After harvest the grapes meant for white wines are ground, lightly sulfured to prevent oxidation, and fermented for two days and an hour before pressing. If the mash has been sulfured, then germ is added to the almost entirely de-slimed cider, and filled into wooden barrels and noble steel tanks for fermentation at 18-22°C. |
